Ingredients
120g cooking chorizo, chopped
1 red onion, chopped
2 garlic cloves, grated or finely chopped
1 tsp hot smoked paprika
80g sundried tomatoes, roughly chopped
600g skinless, boneless chicken thighs
400g can chopped tomatoes
100ml chicken stock
Juice of 1 lemon
Jacket potatoes, to serve
Chopped fresh parsley and soured cream (optional, for topping)
Instructions
1. Start with the Chorizo
In a large saucepan or flameproof casserole dish, cook the chopped chorizo over medium heat for about 5 minutes, until it releases its oil and starts to crisp at the edges.
2. Add Onion and Garlic
Stir in the chopped red onion and cook for 5 more minutes, or until softened. Add the garlic and cook for another 2 minutes.
3. Layer in the Flavor
Mix in the smoked paprika and sundried tomatoes. Add the chicken thighs and cook for 2 minutes per side, allowing the spices to coat the meat and begin to brown.
4. Simmer the Ragu
Pour in the chopped tomatoes and chicken stock. Reduce the heat to low, cover the pan, and simmer for 40 minutes, or until the chicken is tender and easy to shred. Stir in the lemon juice at the end.
5. Serve and Garnish
Split open hot jacket potatoes and spoon the ragu on top. Garnish with chopped parsley and a dollop of soured cream, if desired.
